How this works
When the farm sends chicken to the kitchen, the farm's stock leaves at what it cost
to rear and the kitchen is charged the price set here. The difference is the sending
site's margin β that is how poultry shows a profit on the birds we eat ourselves,
and how the kitchen gets judged on a price a chef can actually do something about.
Leave a line blank and it moves at cost, with no margin either way. Nothing is
guessed: an empty price means nobody has decided yet.
Changing a price never rewrites history. A new price is a new row from today onward,
so what a transfer was charged last month stays true.
